Our pizza dough for Italian pizza is made with a unique blend of 4 different types of flour, which are dinkel wheat, kamut, durum and wheat combined with a sourdough. The pizza is then cold raised for 72 hours according to a traditional recipe from Ancient Rome.
This method yields a unique flavour, a special aroma and a finshed pizza, which is kind on your stomach. This is why the pizza is called "The Gods' Pizza".
It is made of 4 different types of flour - dinkel wheat, kamut, durum and wheat and sourdough. The dough cold raises the minimum 72 hours which is a requirement for being able to bear the name "Pizza" - if it raises for less time, professionals do not consider it pizza, but bread with toppings! The composition of the dough and the long rising time give a unique flavor, a special aroma, a lightness and a pizza that is healthy for the body and stomach and the taste is unlike any other pizza you have ever had in Denmark before !! and perhaps even in Italy ....
Expert knowledge, our special dough and our brick oven, which keeps a stable high temperature of over 400 ° combined with high quality toppings, tomatoes from Southern Italy and fresh Italian mozzarella, mean we can serve the most amazing and genuine Neapolitan pizza even here in Copenhagen.
Our kitchen is based on traditional italian recipes and fresh produce, where everything is made from scratch and homemade - even the house's various tiramisús.
